I have been updating System Explorer as each new irritation of the program has been developed to see if the above aforementioned issue has been resolved. I guess I have been a little busy or I just forgot to try the latest version ( 5.9.1.5242 ) but long and behold each of my cores are now being indicated under each of the individual core charts.
I decided to try the earlier versions of System Explorer to see if they still had the same issue that I reported. The only one that had the issue was V 5.0.2. This version had didn't show any CPU activity even on the global CPU chart.
So I don't know what has changed on my Windows installation that now allows each individual CPU chart to display each cores use?
In any case, each core is now monitored and displayed in the System Explorer performance tab at this time. If I come across the malfunction again, I will report it.

Updated to Version 5.6.0.5210. No change. Same issue noted. No individual core activity. All per core graphs are blank. Overall CPU graph indicates CPU activity. All other graphs are present with changing values.
